Whisk egg whites with the salt until soft peaks form. Gradually beat in all the sugar until the peaks are stiff and glossy. Add in the vinegar, corn starch and vanilla extract and beat on a low speed until well incorporated. Spread out meringue onto a cookie sheet, lined with parchment paper, in the shape you desire (at least 3 inches high to get a nice softness inside your pavlova cake). Lower the oven temperature to 250?F (120?C) and bake for 75 minutes. Turn off oven and let the pavlova cool completely inside the closed oven.
