Pavlova Meringue Cake Recipe

In this video I will show you how to make a pavlova meringue cake that doesn’t end up sinking down in the middle. Pavlova is a traditional New Zealand cake used to celebrate birthdays, holidays and other special occasions.

RECIPE FOR PAVLOVA CAKE

Pavlova Ingredients
4 egg whites (room temperature)
pinch of salt
1 cup of sugar
2 tsp white wine vinegar
2 tsp corn starch
1 tsp vanilla extract

Pavlova Baking Instructions

Pre-heat oven to 320F (160C). Whisk egg whites with the salt until soft peaks form. Gradually beat in all the sugar until the peaks are stiff and glossy. Add in the vinegar, corn starch and vanilla extract and beat on a low speed until well incorporated. Spread out meringue onto a cookie sheet, lined with parchment paper, in the shape you desire (at least 3 inches high to get a nice softness inside your pavlova cake). Lower the oven temperature to 250?F (120?C) and bake for 75 minutes. Turn off oven and let the pavlova cool completely inside the closed oven. Remove from oven and decorate as desired.

Pro Tip: To make a really decadent pavlova dessert, decorate with whipped cream and fresh berries.
