My daughter, Xanthe, is graduating highschool this year and just like so many grads around the globe in 2020, she will not be having a graduation ceremony at school this year.
The schools are hoping to maybe do a belated graduation in the fall, or even later once the pandemic is over or at least safe enough for a socially distant graduation celebration.
But if you’re like me, then you don’t want to wait to celebrate your child’s special achievement. So whether your child is graduating from kindergarten, elementary school, highschool, college or university, these simple graduation cap cupcakes will be really quick and easy to make to show your child how proud you are of their hard work.
To make these graduation cap cupcakes I baked a dozen of my vanilla sponge cupcakes. While they were baking I whipped up a batch of my tasty mocha buttercream icing, and my homemade marshmallow fondant icing.
I used a piping bag to swirl the mocha frosting on top of each cupcake. Then I rolled out the marshmallow fondant and cut out small squares to represent the graduation caps. I rolled out smaller round balls that I flattened on top of the caps to hold the graduation tassels in place.
I made the tassels out of fondant as well by rolling out two round ropes and then rolling them gently together. I painted the caps purple and silver, my daughter’s school colours with food colouring. Then I added some silver dragee balls to jazz up the graduation celebration!
They were a hit!
