Easter Egg Cake

Easter is just around the corner and I have made my share of Easter cakes.This particular one stands out for me. I made this cake for charity as a raffle item to raise funds for a local parent centre to pay for new craft materials.

This cake was made of four layers and each and every layer had chocolate Easter eggs hidden inside. (The Easter bunny really did a good job that year on hiding the eggs ;0)) As you can see, the big Easter egg Cake had chocolate Easter eggs on the outside sort of peeking out as well as a teaser.

As I said before, I made four round cakes and I “glued” them on top of each other with icing, after I had carved out areas to hide the eggs. Then, once the four layers were stacked, I started to carve the cake to make the egg shape.

At this stage of the cake decorating process, my kids and my husband usually come roaring in like a bunch of vultures and start swiping the carvings.

I covered the cake with white marshmallow fondant and did all the detailing with the white fondant as well. I painted the colours rather than making coloured fondant. This is a lot faster and easier on the wrists.
